These delicious buffalo shrimp lettuce tacos topped with crumbled blue cheese and homemade ranch dressing are so fresh, delicious, and healthy. They are also keto-friendly, perfect for meal prep, or busy weeknight.

There are not so many ingredients in these keto shrimp tacos. All you need is shrimp (I usually use cooked), buffalo wing sauce, blue cheese, and the homemade ranch. Let’s not forget the lettuce.

If you are wondering which is the best lettuce for shrimp lettuce tacos, it is the iceberg lettuce because it is longer and thicker. I used Boston lettuce for the recipe because that’s the one I had in my fridge but I was struggling to separate the leaves.

Buffalo Shrimp Lettuce Tacos With Homemade Blue Cheese Ranch

Ingredients
  

  • 1 Lb Shrimo devine
  • 1/4 Cup Buffalo sauce
  • Salt & Pepper
  • 1/4 Cup Homemade Ranch follow recipe

Homemade Ranch

  • 1/2 Cup Mayo
  • 1/2 Cup Sour Cream
  • 1/2 Cup Milk
  • 1/4 Cup Blue Cheese
  • 1/2 Tsp Fresh Chives minced
  • 1/2 Tsp Parsley minced
  • 1/2 Tsp Dill minced
  • 1/2 Tsp Onion powder
  • 1/2 Tsp Garlic powder
  • Salt & Pepper
  • 2 Tbsp Lemon juice

Instructions
 

  • To make the homemade ranch combine the sour cream, mayo, milk, chives, parsley, dill, onion powder, garlic powder, lemon juice, and salt & pepper. Whisk until smooth. Add the blue cheese and stir to combine.
  • To make the buffalo shrimp, toss the shrimp, salt & pepper, and the buffalo sauce until combined.
  • Heat a a skillet to medium heat and add the buffalo shrimp. Cook on both side for about 5-6 minutes flipping half way through .
  • When done arrange on top of a lettuce leaf, top with blue cheese and drizzle with the homemade ranch.
