Greek Ground Lamb Pita Sandwich made with perfectly spiced lamb meatballs, mint, and thyme tzatziki sauce, and served over a homemade pita bread is the taste of a classic Mediterranean lunch. Its interesting tzatziki sauce variation is so fresh and summery and the ground lamb is seasoned with sweet paprika, cumin, and lemon pepper.

Here is everything you need for this ground lamb recipe. Follow the list and instructions for a super easy and quick recipe.

  • Ground Lamb – you can use ground chicken or ground beef as well.
  • Egg – this is to hold the meat together when the meatballs are formed.
  • Parsley – I prefer flat leaf parsley.
  • Sweet Paprika – use regular paprika if you can’t find it. Or order my favorite Hungarian Sweet Paprika here.
  • Garlic
  • Cumin
  • Salt
  • Lemon Pepper – use regular if you don’t have lemon pepper.

How to make Lamb Pita Sandwich?

First, mix the ground meat with the herbs, spices, and add the egg. Make sure that the spices are not forming clusters in the meat.

After the meat is seasoned, scoop a small amount at a time and roll with your hands. Cook in the oven for about twenty minutes at 375 F.

How to make the Mint & Thyme Tzatziki Sauce?

Here is what you need for this tzatziki sauce variation:

  • Greek Yogurt – plain.
  • Cucumber
  • Garlic
  • Olive Oil – extra virgin.
  • Fresh Mint
  • Thyme
  • Salt & Pepper – I really like this Black Sea Salt by Salt Odyssey!

Mince the cucumber, garlic, mint, and thyme, then whisk in the Greek yogurt. Finally, add the olive oil and season with salt and pepper. So easy!

To assemble the sandwich simply warm up the pita, transfer the lamb meatballs on top and drizzle tzatziki sauce. It comes together in forty minutes tops.

How to store ground lamb?

You can keep the seasoned uncooked ground lamb in the fridge for up to 3 days and up to 3 months in the freezer. Cooked ground lamb stays good for up to a week in the fridge and 5 months in the freezer.

The mint & thyme tzatziki sauce stays fresh for up to 7 days in the fridge. I don’t recommend freezing the sauce because when thawing it the dairy changes its consistency.

  • 1 Lb Ground Lamb
  • 1 Egg
  • 2 Tbsp Fresh Parsley minched
  • 1/4 Tbsp Ground Cumin
  • 1 Tbsp Garlic minced
  • 1/4 Tbsp Sweet Paprika
  • 1 Tsp Salt
  • 1 Tsp Lemon Pepper

For the Tzatziki Sauce (makes 1 cup)

  • 1 Cup Greek Yogurt
  • 1/2 Cup Cucumber minced
  • 2 Tbsp Olive Oil
  • 1 Tbsp Garlic minced
  • 2 Tbsp Fresh Mint minced
  • 1 Tbsp Fresh Thyme
  • Salt & Pepper to taste
  • 4 Pita Bread


  • Preheat the oven to 375 F and line a baking sheet with foil to avoid mess.
  • To make the meatballs combine ground lamb, egg, parsley, cumin, garlic, sweet paprika, salt & pepper. Mix well until everything is incorporated and the spices are not in clusters.
  • Scoop a small amount of meet and roll with your hands into small meatballs then line on the baking sheet. Cook in the oven for 20 minutes.
  • To make the tzatziki sauce combine the yogurt, cucumber, mint, thyme olive oil, garlic, and salt and pepper. Chill before serving.
  • When the meatballs are ready heat the pita bread. Wrap the pitas individually in damp paper towels and microwave for 30 seconds.
  • Transfer to a plate and add the meatballs on top. Drizzle some of the mint tzatziki sauce and more fresh herbs.
