Greek Marinated Grilled Shrimp with Jasmine Rice

This delicious 30-minute marinated grilled shrimp dinner served over the perfect jasmine rice is healthy, meal prep friendly, and very flavorful. The spiced shrimp mixed in with the cilantro jasmine rice makes this dinner full of nutrients and healthy properties.

Ingredients for marinated grilled shrimp and jasmine rice

This is one of my favorite shrimp recipes because it requires so few ingredients. All you need is jumbo or medium shrimp, jasmine rice, a bunch of spices and herbs. Here is a better list of everything.

  • Jumbo shrimp – shell off, tail on – I use cooked and frozen because it is easy and quick.
  • Greek Yogurt – it works wonders for marrinating but if you really want the best flavor use Bulgarian Yogurt instead. It is slightly more expensive but definately worth it.
  • Paprika – hot, sweet, literally, any paprika works.
  • Cumin
  • Garlic powder or fresh minced garlic
  • Salt and pepper
  • Jasmine Rice
  • Mint leaves
  • Cilantro leaves
  • Olive Oil

First, marrinate the shrimp

Marinating is great for shrimp because it gives it even more flavor. You don’t have to marinate it overnight or for long periods of time – 30 to 40 minutes are totally enough.

In a large bowl combine the yogurt, shrimp, and spices and toss to combine. When ready to cook simply heat a skillet with a little bit of olive oil and add the shrimp to it when it is hot enough. Cook on both sides for a few minutes.

If you have frozen and divined shrimp it means it is already cooked so all you have to do is heat it on the pan. If the shrimp is fresh or uncooked monitor the color. When it is red-ish or orange color it is ready to be taken out of the pan.

How to make the perfect jasmine rice on stove?

A lot of people are intimidated by rice and I used to be one of them. The truth is it is so easy! Jasmine rice seems to be easier than other types of rice to cook.

I usually check the instructions on the package first just in case. I usually do a 1:2 ratio (rice : water). So if you have 1 cup of rice add 2 cups of water when you cook it.

From there it is easy – bring the water to boil and then lower the heat to low. Simmer for about 15-20 minutes or until the water is absorbed. Look out for white dots on the rice – this means it is still raw.

Don’t forget to season!

A lot of people ask me often how to season jasmine rice and what is the best way to make it flavorful. Here are a few steps to follow for deliciously seasoned rice.

  • Season the water with salt whne cooking the rice. Be jenerous with the salt here.
  • Once it is done season again with salt and pepper or your favorite spices.
  • Add salted butter right before fluffing the rice.

Serve everything immediately for a guaranteed flavor explosion. If there are leftovers, store them in an airtight container in the fridge for up to five days and up to three months in the freezer.

Spicy Shrimp with Herb Jasmine Rice

  • 2 Lbs Raw Shrimp peeled and divined
  • 2 Tsp Smoked Paprika
  • 2 Tsp Dried Oregano
  • 1 Tsp Garlic Powder
  • 1 Tsp Ground Cumin
  • 1 Tsp Salt and Pepper
  • Zest of 1 Lemon
  • 1/2 Cup Plain Yogurt

For the Greek Yogurt Lemon Aioli

  • 1/2 Cup Plain Greek Yogurt
  • 2 Tbsp Mayonaise
  • 1 Tbsp Fresh Lemon Juice
  • 1 Tsp Garlic Powder
  • 1 Tbsp Fresh Dill minced
  • Salt and Pepper to taste

For the Mint and Cilantro Rice

  • 2 Cups Jasmine Rice
  • 2 Tbsp Fresh Mint Minced
  • 2 Tbsp Cilantro minced
  • Salt and Pepper to taste


  • In a mixinf bowl combine the shrimp, smoked paprika, oregano, garlic, cumin, salt and pepper, lemon zest, and yogurt. Toss to combine and cover with plastic wrap. Let it sit in the fridge for 30 minutes.
  • Meanwhile, prepare the yogurt aioli. In a mixing bowl cimbine the yogurt, mayo, lemon juice, garlic powder, dill, and salt and pepper. Whisk until everything is mixed in well.
  • To make the mint and cilantro rice combine the rice and water in a sauce pan. Season with salt and bring to boil. Once the water is boiling bring the heat down to low and cover. Simmer for about 15 minutes or until the rice has taken in all the water.When done, keep it covered until you are ready to serve it.
  • Meanwhile, take the shrimp out of the fridge and heat the grill or skillet over medium heat. Add the shrimp and cook for about 10 minutes on both sides or until it becomes pink and is cooked all the way through.
  • When the shrimp is ready, remove the cover on the rice. Fluff it up with a fork and add the cilantro and mint. Season generously with salt and pepper and mix well. Transfer to a plate and add the shrimp on top. Drizzle with the yogurt aioli and garnish with left over herbs. Serve immidiately.
